Broiled Shrimp Scampi

  • 1/2 lb large Shrimp, cleaned, de-veined, and peeled
  • 1/4 tsp Pepper
  • 1 tsp Butter, melted
  • 1 tsp Olive Oil
  • 1 Tbsp Fresh Parsley, chopped
  • 1 Garlic Clove, crushed


For this recipe, combine margarine, oil, garlic, and pepper in a shallow heat-proof casserole dish. Add shrimp, and toss lightly to coat. Spread shrimp in a single layer. Broil shrimp 4" from heat 3-4 minutes. Turn and broil an additional 3-4 minutes or until lightly browned. Sprinkle shrimp scampi with parsley, and serve hot.
