Crab Quiche

A cheesy topped delicious crab quiche served in a round baking dish

  • Yield: 6 servings


  • 1 lb Crab Meat
  • 8-inch unbaked Pie Shell
  • 2 cups Half-and-Half
  • 2 cups Swiss Cheese, grated
  • 4 Eggs
  • 1/2 tsp Red Pepper
  • 1 medium Onion, minced
  • Salt & Pepper, to taste
  • Pineapple Rings, for garnish
  • fresh Parsley, for garnish


Place crab meat over bottom of pie shell, sprinkle onion and then cheese on top. Beat eggs with salt and cream (half-and-half). Pour egg mixture over all. Bake in preheated 425℉ for 5 minutes. Reduce heat to 350℉ and cook until firm. Foil can be placed over crust to prevent burning. Slice crab quiche and serve hot. Garnish with pineapple rings and parsley.
