Crab Quiche

 - Cook time: 15 minutes
 - Yield: 6-8 servings
 
Ingredients:
- 1 lb Crab Meat
 - 8-inch unbaked Pie Shell
 - 2 cups Half-and-Half
 - 2 cups Swiss Cheese, grated
 - 4 Eggs
 - 1/2 tsp Red Pepper
 - 1 medium Onion, minced
 - Salt & Pepper, to taste
 - Pineapple Rings, for garnish
 - fresh Parsley, for garnish
 
Directions:
Place crab meat over bottom of pie shell, sprinkle onion and then cheese on top. Beat eggs with salt and cream (half-and-half). Pour egg mixture over all. Bake in preheated 425℉ for 5 minutes. Reduce heat to 350℉ and cook until firm. Foil can be placed over crust to prevent burning. Slice crab quiche and serve hot. Garnish with pineapple rings and parsley.
