Vinaigrette Marinade

- Yield: 1/3 cup
Ingredients:
- 1 Garlic Clove, crushed
- 1/4 tsp Coarse Salt
- 1/2 tsp Dijon Mustard
- 2 tsp Lemon Juice
- 1/4 cup Olive Oil
- 1 tsp Red Wine Vinegar
- 1/4 tsp Pepper, freshly ground
Directions:
Mash the garlic and salt together in a small bowl, with the back of a spoon. Stir in the mustard and lemon juice. Whisk in the olive oil, vinegar, and pepper. Use to marinade fish in refrigerator and to baste while cooking.
