Scampi Butter Sauce

  • Shrimp Roe from 1 lb of Jumbo Spot Shrimp (about 1/8 cup)
  • 3 cloves Garlic, peeled
  • 1 Shallot, peeled
  • 2 Tbsp Parsley
  • 1 Tbsp Lemon Zest
  • 1 Tbsp Lemon Juice
  • 1/4 lb unsalted Butter, room temperature
  • dash of Cayenne or Paprika


Mash shrimp roe in a cup or bowl and set aside until ready to use. Mince the garlic, shallot, parsley, and zest. Then mix in the lemon juice, butter, and shrimp eggs until thoroughly combined. Season with salt, pepper, and paprika or cayenne. Heat in a pan and serve piping hot for a delicious shrimp scampi butter perfect for dipping.
