Scallops Lambrusco

  • 1 lb medium or large Scallops
  • 1 bottle Lambrusco, or other semi-dry red wine
  • Black Pepper, to taste
  • Paprika, to taste


Cover the bottom of a glass casserole dish with a single layer of scallops. Pour wine over scallops. Wine should be as deep as scallops are thick. Mix a little pepper and paprika together, and sprinkle over the top. Bake at 350°F until tops begin to turn light brown.
