Wild Alaska Salmon with Spiced Coffee Rub

A broiled salmon fillet covered in spiced coffee rub with potatoes & green beans

Ingredients:

  • 1-1/2 pounds Alaska Salmon
  • Heavy-duty Aluminum Foil
  • Cooking Spray

Rub Ingredients:

  • 1 Tbsp finely ground Coffee
  • 1 Tbsp ground Coriander
  • 1 Tbsp Smoked Paprika
  • 1 Tbsp granulated Garlic
  • 2 Tbsp Kosher Salt

Directions:

Heat oven to 375°F. Mix rub ingredients together well. Cut 2 pieces of wide, heavy-duty aluminum foil about 6-inches longer than the salmon side. Stack the foil pieces (shiny side down) on a baking sheet and spray generously with cooking spray. Place the salmon, skin side down, in the middle of the foil. Fold the foil sides and ends up (1 to 2 inches) to make a shallow pan around the salmon, leaving at least a 1-inch margin around the fish.

Rub/pat about 1 teaspoon rub on each salmon portion. Let the rub rest on the salmon about 10 minutes before cooking. Carefully transfer the foil pan to the center of the preheated oven. Do not cover the salmon with foil or close the foil over the salmon. Close oven and cook for 12 to 15 minutes, cooking just until fish is lightly translucent in the center. Remove from the oven and let rest a few minutes before serving. To add a bright flavor, serve with lemon and orange wedges for squeezing over the top after cooking.
