Oven Baked Lemon Salmon with Asparagus
- Preparation Time: 15 minutes
- Cook time: 15 minutes
- Yield: 1 serving
Ingredients:
- 8 oz Salmon Fillet
- 1/4 bundle Asparagus
- 3 thin slices Lemon
- Salt and Pepper, to taste
- pinch Parsley Flakes
- drizzle Olive Oil
Directions:
Preheat the oven to 450°F degrees. Remove thawed salmon from packaging. Rinse asparagus and cut ends off. Season salmon and asparagus with salt and pepper, then drizzle with olive oil. Slice about an 1/8 of a lemon thinly - you'll only need enough slices to cover your piece of salmon.
Place salmon skin-side down with asparagus on an aluminum-foil wrapped cookie sheet, or small baking dish. For crispier skin, lightly coat aluminum-foil with olive oil. Place a couple of thin slices of lemon directly on top of your salmon fillet. Bake for 12 to 15 minutes, or until salmon is firm to touch. Salmon and asparagus pairs well with pasta, potatoes, and rice.
